I know this as nshima, but that might not be the most well known term in English.

乌咖哩(英語:ugali,有时也被称作:sima、sembe或posho)是用水煮熟的面团状的玉米粉食品,是东部非洲大湖地区和南部非洲饮食中最常见的淀粉类主食。传统吃法,是用手一次滚出一个小球,然后用三个手指捏制成饼,舀住炖好的蔬菜或肉及酱汁后,用拇指按压住上方使乌咖哩饼呈勺状,送入口中。与一些文化中吃薄饼的方法相同。

Ugali, also known as ugali pap, nsima and nshima, is a type of maize flour porridge made in Africa.[1] It is also known as ngima, obusuma,obuchima, kimnyet, nshima, mieliepap, phutu, sadza, kwon, isitshwala and other names. Nsima is sometimes made from other flours, such as millet or sorghum flour, and is sometimes mixed with cassava flour.[citation needed] It is cooked in boiling water or milk until it reaches a stiff or firm dough-like consistency.[2]
