Saw this on a menu yesterday 豉椒炒肉 pork stir fried in a black bean sauce.

The only thing I'm finding in dictionaries is:
豉椒炒魷
Which is apparently from CCCanto, it displays in Pleco but I can't seem to find it on cantonese.org. Their definition says, "literally: fried squid in a black bean sauce; to get the sack; to be fired [colloquial]"

It just means "fermented black soybeans and chili pepper".

Another example ~ "Sizzling Aubergine And Green Pepper With Black Bean Sauce. 铁板豉椒茄子"
But the names of Chinese dishes don't have to be translated literally, with every character accounted for, and that's why the chili is sometimes omitted in the translation.
