I'm unconvinced it can be used as a countable noun, but if it can, then it's really narrow. I think we should omit the classifier. - It's a verb that can be used as a noun ("the act of [verb]"). The "theory of evolution" is 进化论. Admittedly, it seems 进化 is more commonly used as a noun than a verb. - 进化 doesn't match perfectly with "to evolve" in English; sometimes 发展 and 演变 are better choices.
