It's not made from beancurd (tofu). It's made from what the Japanese call yuba -- the film that forms on the surface of soymilk. In English, it's called 'beancurd skin' or 'tofu skin' (somewhat confusingly, given that it's not processed from beancurd/tofu). Also, it's folded *before* it's dried, while still wet, so describing it as "folded dried ..." is back-to-front.
