2) Regarding your examples:

a) 水深 is a word (shuǐshēn). It's not an example of 深 acting as a standalone word (noun). Likewise, 深受 is one word (shēnshòu), not an example of an adverb followed by a verb (shēn shòu). Both of these words (水深 and 深受) are in CC-CEDICT and serve to illustrate how 深 is used. There are many other *深* words in the dictionary, such as
深入
縱深
深山
深綠 etc
These illustrate various facets of 深's meaning. We assume that users who want to understand a single-character word more fully will check out the compounds. Consequently, our single-character definitions tend to be stripped back to their essentials.

b) 深 is an adjective in 有多深.
有多深 is an example of a general structure: "有 + 多 + adjective".
Ex.
壓力有多大?
這種情形到底有多嚴重?
到底有多低迷?
對孩子的道德影響究竟有多深遠?
