鳖裙, commonly known as 裙边, means 鳖甲边缘的肉质部分

calipash 是甲鱼紧贴上盖之下的胶质物, calipee 是下盖之上的胶质物。鳖裙是甲鱼上盖可用的胶质软边。三者在甲鱼身上之地位不同,而其为美味则一。

Your source says "上盖之下", which makes me think of something beneath the shell, i.e. it is inside the shell and hidden from view. But I've only found a few sources saying it's "beneath" the shell.

Other sources (some of which I've listed below but there are lots more I was too lazy to add) indicate it's "part of" or "on" or "contiguous to" the carapace. These are not necessarily mutually exclusive by the way - the calipash could be part of the shell while also growing underneath it and extending outwards, like a "skirt" 裙.

And if you watch this video (warning: graphic) at the 10:40 mark, he cuts the "soft spots" off the carapace and holds it up to the camera at 11:12, which I believe is the calipash. It is a soft, gelatinous fringe on the sides and back of the carapace.
