日照較短,加上雲霧的滋潤,茶樹芽葉所含兒茶素等苦澀成分較低,茶胺酸及可溶氮等對甘味有貢獻的成分含量較高,

例如越光米,粒型飽滿、口感Q彈回甘,很適合做壽司;台梗9號,黏性佳、具甘味,適合做蓋飯、炒飯;
