營養豐富的牡蠣有「海中牛奶」美稱,閩南語叫它「蚵仔」,廣東人稱「蠔」,在西式餐廳「生蠔」則是桌上佳餚,種種名稱讓人疑惑,究竟這些「白白軟軟」的貝類是同一種生物嗎?

牡蛎,又称蚵仔(台罗:ô-á)、蚵、蚝(粤拼:hou4,潮拼:o5)、生蚝(广东话,台湾)、海蛎子、蛎黄、蚝白、青蚵、牡蛤、蛎蛤、硴等,泛指所有属于牡蛎目牡蛎总科的双壳纲软体动物。
