不論是豬血糕或米血糕,都是以糯米和動物血(豬、鴨、雞)做成的米食糕點,由於鴨肉滋陰補虛,昔日農家殺鴨之後,基於節儉美德,不忍心倒掉鴨血,所以會用食器盛米和鴨血,蒸熟後沾醬食用,後來流傳開來,漸漸成為平民小吃。然而鴨肉價高、養育費時,鴨血供不應求,而雞血又不易凝固,於是漸漸以豬血取代鴨血,成為「豬血糕」。現在吃法多為先將豬血糕蒸熟後,沾上甜辣醬,裹上一層花生粉、再灑點香菜,是夜市很受歡迎的小吃。

一種傳統小吃。將豬血加入糯米、食鹽等蒸熟而成的塊狀糕點。
