I suppose the 得可以 in the previous examples originated as an abbreviation of something like what we have in the following example, where 得可以 is followed by an explicit action (in this case 開進一輛大卡車).

在楊浦區有一座倉庫,倉庫裡有一座電梯,大得可以開進一輛大卡車,
"There's a warehouse in the Yangpu District with a 100-year old elevator inside of it that was so big you could drive a truck into it."

If so, then it's like the usage of "as" at the end of the following sentence:
"This blade is as sharp as."
(where the full expression — perhaps "as a razor" — is truncated to just "as").

+ 得可以 得可以 [de5 ke3 yi3] /(coll.) (stative verb suffix) very; awfully/
