Editor: It may not be common, but there is certainly some evidence of usage, such as

a) 《马小跳的幸福时光》讲的是周末,马小跳去溜冰,不小心把脚扭伤了。星期一跳着一只脚还坚持来上课,得到了班主任秦老师的表扬,大家也都关心他、帮助他。可他坚持来上学的理由,居然是:星期一有美术课,美术老师又温柔、又漂亮,是马小跳最喜欢的老师。

b) 喜欢在离平台还有四五级时飞身一跃,“嗖”地跳下,重重落地,我也尝试着体验了几次,真爽。可是有一次不小心扭伤了脚。[...] “来,我背你。” “不要你背,留点面子,我这么大了,还要你背?”说完,跳着一只脚,走出了教室。

单脚跳 seems to be commonly used when one is *voluntarily* hopping -- in sports or as part of a game, such as hopscotch.
E.g. 大班幼儿非常喜欢单脚跳的活动,大多数幼儿能坚持用单脚跳过一段距离。

It may be that 跳一只脚 is more appropriate to describe hopping when one is *forced* to hop due to a leg injury.
