國寶宴的第一道菜就是令人驚豔、亭亭玉立的翠玉白菜,精選來自彰化的娃娃菜,白菜上放了兩尾東港櫻花蝦偽裝螽斯,栩栩如生的造型讓人捨不得下箸。料理難處在,火候不能過熟,否則白菜軟爛站不住,而支撐白菜的那根湯匙狀容器也功不可沒,造型取自漢代的盥洗器皿「匜」(聲同宜)。
