But our def implies that 印刷体 are letters produced by printing technology rather than by hand.

The Wp def of "block letters" suggests that what PLC and K say ("block letter(s)") is not wrong.

"Block letters (known as printscript, manuscript, print writing or ball and stick in academics) are a sans-serif (or "gothic") style of writing Latin script in which the letters are individual glyphs, with no joining. In English-speaking countries, children are often first taught to write in block letters, and later may advance to cursive (joined) writing."

However, AHD says a block letter is a capital letter ~ "A plain capital letter written or printed unjoined to a following or preceding letter."
... which is what I thought. So I'd avoid using "block letters" in the def of 印刷体.
