reducing back, after what is probably dictionary-induced inflation..
1. "to open out" is probably just to account for 豁然開朗
2. "open-minded" is maybe dictionary-assisted translation of Ch def.
I don't think it's really that. Just maybe possibly you could say 開朗 is "open", the contrary of "introverted", that's still not "open-minded"s
