1) The definition makes it sound like the fruit is somehow enclosed by the ear. However, this is not the case with grapes, for example. (See point #3.)

2) Kernels of corn and grains of sorghum may technically be fruits, but they are not the sort of thing people think of when the word "fruit". Yet, again and again, definitions mention grains – corn and sorghum in particular:
M ~ 聚集在一起的果實,稱為「果穗」。如玉米、高粱等。
LA ~ 植物莖端成串聚生如穗狀的果實。如玉米、高粱等。
Z ~ 指某些植物(如玉米、高粱)的果实聚集在一起形成的穗

3) I'm not sure about any other fruit, but it seems 果穗 can refer to bunches of grapes:

If it applies to other fruits, maybe we could add "cluster (of fruit)".

Hmm, there are quite a few hits for "桑树的果穗" e.g. 桑椹为桑科落叶乔木植物桑树的果穗,又名桑果,有黑、白两种,...

Maybe we can add "infructescence" to the definition.
"The mature infructescence of a grain, such as wheat or corn, is known as an ear."
