煸炒的操作是先將炒鍋內放少量底油,燒熱,加入原料快速翻炒至熟透,調味而成。

煸炒意思就是油要少,多了就成了煎或炸了,并且不要加水,干煸嘛,代表菜像“干煸辣椒丝”、“干煸芸豆”等。。。
