"caring" doesn't seem very good -- any examples where that's suitable?
Probably best expressed as a verb, isn't it?
"to be concerned about" seems much better than just "concerned"
It's 'care for sb/sth', not just 'sth'
But "to care for" is ambiguous -- can mean "to look after"

他们都很关心你
They're all concerned about you.

Editor: 父亲很关心我 may mean that my father is really caring, not that he is concerned. But 'care about' works.
Diff:
- 關心 关心 [guan1 xin1] /to care for sth/caring/concerned/
+ 關心 关心 [guan1 xin1] /to be concerned about/to care about/
