"Preparing shrimp for consumption usually involves removing the head, shell, tail, and "sand vein"." [Wp]

Rén 仁 [also means] "kernel" (as of a nut). In essence, when someone says 虾仁 xiārén ("shrimp meat"), they're [...] referring to the "kernel" of the shrimp after its shell has been removed.

Editor: Yeah, that's much better. Sorry :-)
Diff:
- 蝦仁 虾仁 [xia1 ren2] /shrimp/prawn/
# + 蝦仁 虾仁 [xia1 ren2] /shrimp meat (the meat of a fresh shrimp after removal of the head, shell, tail and sand vein)/
+ 蝦仁 虾仁 [xia1 ren2] /shrimp meat/shelled shrimp/
