一門漢語 is bad Chinese for many reasons. Not only languages take 種 as the classifier (as in 他會說三種語言), but you can't use classifiers with words like 漢語, 英語, 法語 etc, because they are one of the kind. You can say 一種漢語方言 instead.

Then why does ABC make a point of including the plural in its definition?

It's a commonplace observation that nouns can take more than one classifier.

Just google it, it's a common thing.

Second, 漢語 is countable.
They can and do say
我母语不过27个声母,所会的两门汉语加一起总共就三十几个声母
or
美国要发明一门汉语?
