My wife asked me to help by cutting a carrot into 滚刀块. The submitted definition simplifies the process a bit (otherwise it becomes too long, and I don't know a corresponding short English term.)

烹饪术语。指采用原料滚动、斜立刀的方法...
滚刀块切法
  1、先斜切一刀。
  2、把切面翻朝上面。
  3、在切面的二分之一处(根据要切的块的大小而决定)斜切。
  4、再把上一次的切面翻朝上面。
  5、还是在约二分之一处斜切。 这样不断地一翻一切,一翻一切。
