Admittedly, it is probably *usually* plural, if you go by the
jukuu examples. And several dictionaries use the plural in
their definitions. But I think we use the singular in our
definitions when the word can be either singular or plural.
Some jukuu examples:

赛后拍卖获胜马匹的赛马比赛。a horse race in which the
winning horse must be put up for auction.
他们大家都回头望着波涛汹涌的海面,搜索着他们那位奇特
的船长和他的马匹。All of them looked back across the rough
sea, looking for their strange captain and his horse.
他奔到他的马匹处,赫廉跟在他的身后。He rushed to his
horse. Hallam followed him.
Diff:
- 馬匹 马匹 [ma3 pi3] /horses/
+ 馬匹 马匹 [ma3 pi3] /horse/
