a) to pick over" doesn't mean anything to me
b) dicts say that zhai2 is just another pronunciation for ze2.
However I beg to differ, zhai2 seems to imply elimination, of
which I give a few instances.
Diff:
= 擇 择 [ze2] /to select/to choose/to pick/to differentiate/

- 擇 择 [zhai2] /pick over/
+ 擇 择 [zhai2] /to choose/to pick over/to pick out/to take out/to eliminate/

+ 擇日子 择日子 [zhai2 ri4 zi5] /to pick an auspicious day/
+ 擇刺 择刺 [zhai2 ci4] /to pick out the bones in a fish/
+ 擇菜 择菜 [zhai2 cai4] /to pick the edible part of vegetables/

+ 擇不開 择不开 [zhai2 bu5 kai1] /impossible to separate/impossible to disentangle/cannot take time out/
