I would like to make it a rule that, since we are a Chinese-*English* dictionary, in our definitions the spelling of a word that comes from another language should be the usual English spelling of that word whenever there is an established "usual spelling".

So,
Moscow, not Moskva
Tokyo, not Tōkyō
tofu, not tōfu
Cologne, not Köln

However, "cliché" (with an accent) would be fine.
"cliché, or less commonly cliche"
https://www.merriam-webster.com/dictionary/clich%C3%A9

The exception would be when we are quoting the word *as* a foreign (non-English) word, as in
暴论 /wild remark; outrageous statement (orthographic borrowing from Japanese 暴論 "bōron")/
(In this case, there is no "usual English spelling" anyway.)
