1. It's hot/boiling water (湯), not just "water".
(It's not such a terrible thing to "go through water"!)
See GF, for example: "奔向沸水..."

2. 赴 means 投入 in 赴湯蹈火, according to LA
https://www.moedict.tw/~%E8%B5%B4

Ex.
- 他们不论叫我做什么,我都会赴汤蹈火。
- 今天的幸福生活,是无数革命先烈赴汤蹈火,流血牺牲换来的,我们一定要珍惜。
- 因此随时准备为自己的偶像赴汤蹈火。
- 只要你一声令下,赴汤蹈火都在所不惜。 "I'm ready to do anything you tell me to do."
- 出入生死、赴湯蹈火,你可知道中華民國搜救總隊隊員是如何訓練養成的嗎?
Diff:
- 赴湯蹈火 赴汤蹈火 [fu4 tang1 dao3 huo3] /to go through water and tread on fire (idiom); not afraid of any difficulty/
+ 赴湯蹈火 赴汤蹈火 [fu4 tang1 dao3 huo3] /lit. to jump into scalding water and plunge into raging fire (idiom)/fig. to brave any danger/to go to any lengths (for a noble cause)/
