I suggest replacing my own explanatory definition ("person who is outstanding in their field") with a few English equivalents.

person who is outstanding in their field -->
leading light; superstar; badass
--------------------------
Also adding 牛人, which is a synonym.

"牛人 ... refers to somebody who is very extraordinary or outstanding ... [a] formidable person."
Understanding the Chinese Language: A Comprehensive Linguistic Introduction

Some examples:
A.
1。Stanford
2。Berkeley
3。 Chicago
Lars P. Hansen (superstar in finance),Steven Lalley: (superstar in Probability, previous editor for Annals of Probability),Gregory Lawler: (superstar in Probability, current editor for Annals of Probability),Peter McCullagh: (superstar, COPSS winner, editor of Bernoulli)
4。Harvard

Basically same meaning as 达人, i.e. true expert; real expert.

C.

D.
牛 [slang] adj. having powerful skills and special strength:牛人 (a guy who is really something)

-----------------------------------
'badass' is ambiguous, of course, and that's why I put it in third position.
It's also offensive to some, apparently.
I use it in this positive sense ~ "a formidably impressive person" (from the Web)
Wiktionary ~ A person considered impressive due to courage, skill, and/or toughness.

superstar ~ "One that is extremely popular or prominent or that is a major attraction."
Diff:
- 大牛 大牛 [da4 niu2] /(coll.) person who is outstanding in their field/(coll.) higher-priced model of Lamborghini/
+ 大牛 大牛 [da4 niu2] /(coll.) leading light/superstar/badass/(coll.) higher-priced model of Lamborghini/
+ 牛人 牛人 [niu2 ren2] /(coll.) leading light/true expert/badass/
